Ingredients for 3–4 servings
For the meat
1 pork tenderloin, 450–550 g
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon ground pepper
1 teaspoon ground sweet paprika
½ teaspoon granulated garlic
1 sprig fresh rosemary
For the cranberry sauce
½ cup fresh or frozen cranberries
⅓ cup honey or maple syrup
⅓ cup freshly squeezed orange juice
1 teaspoon Dijon mustard
1 tablespoon butter
1 teaspoon balsamic vinegar, optional
Preparation
Pat the pork tenderloin dry with paper towels. Rub with olive oil, salt, pepper, paprika, and garlic.
Let rest for 10 minutes. Heat a skillet. Sear the meat for 2-3 minutes on each side until it has a nice crust. Transfer to an ovenproof dish and add the rosemary. Bake at 200°C for 20-25 minutes. Do not overcook, it should remain juicy.
For the sauce, melt the butter in the frying pan. Add the cranberries, honey, orange juice, and mustard. Cook for 6-8 minutes until the cranberries burst and the sauce thickens. Add balsamic vinegar if desired. Remove the meat and slice it. Pour the hot cranberry sauce over it. Garnish with fresh cranberries and rosemary.
